Alice Gilmour is a Food System Analysis Researcher in the Food Systems Group at the Environmental Change Institute, University of Oxford. She contributes to the Co-Centre for Sustainable Food Systems, an interdisciplinary research initiative engaging academics, industry, government, and policymakers across the UK and Ireland. Her work focuses on developing a food system conceptual framework and analyzing food system activities and outcomes on the island of Ireland to support the transition to climate neutrality by 2050.

Previously, Alice researched school food at Cardiff Metropolitan University, where she assessed school menus across Wales and analyzed canteen sales data to understand pupils’ purchasing behaviors. This work aligned with her PhD, also at Cardiff Metropolitan, which explored factors influencing Welsh adolescents’ vegetable intake through mixed-methods research, supported by Wales’ largest vegetable producer.

Alice has also worked at Ulster University, assisting small- and medium-sized agri-food firms in leveraging market intelligence (e.g., Dunnhumby, Kantar) to improve their supermarket listings and new product development. She conducted a longitudinal study on the impact of market intelligence on buyer relationships and product innovation. Alice holds an MSc in Marketing from the University of Kent.
