Clare Gollogly is a PhD student at the UCD Institute of Food and Health, supervised by Dr Aifric O’Sullivan. She holds a BSc in Food and Nutrition from Ulster University and has built a strong foundation in nutrition research through her work as a research assistant for Food for Health Ireland, where she investigated the potential benefits of grass-fed dairy on cardiometabolic health. Clare’s research focuses on the interactions between genes, environment, diet and metabolism to understand variation in nutrition and health outcomes. By integrating phenotypic, metabolic, and behavioural outcomes, Clare aims to develop personalised dietary strategies supporting health and sustainability.
