Emily S. Krueger is a PhD student on Platform 3, Health and Nutrition, under the supervision of Dr. Catherine Hughes and Professor Mary Ward at Ulster University. She holds a BS in Environmental Science and MS in Nutritional Science MS from Brigham Young University USA. She has completed a 2-year research fellowship at the USA National Institutes of Health where she linked a climate sustainability metric to the diet assessment tools implemented in the ongoing Nutrition for Precision Health study powered by the All of Us research program.

Emily’s current work is focused on evaluating how diets from sustainable sources contribute to micronutrient intake (especially B-vitamins involved in one-carbon metabolism pathways) and health outcomes. Her career goal is to define and motivate diets that are simultaneously healthy and sustainable for individuals, families, and the planet.
