Michael O’Neill is a PhD student within the UCD Institute of Food & Health, supervised by Dr Breige McNulty. He holds a BSc in Food Innovation from TU Dublin and has built a strong foundation in nutrition research through his work with the FSAI’s Food Reformulation Taskforce and the UCD PLAN’EAT Living Lab Project.
Michael’s research focuses on understanding the necessary changes for transitioning to healthy, sustainably sourced diets. He aims to contribute to the establishment of a family cohort, and to analyse Irish and European datasets to identify potential pathways to healthy diets from sustainable sources.
