Rayhan Uddin, a Walsh Fellow, is currently pursuing his PhD, focusing on mycotoxins in food and feed. His ongoing PhD research focuses on improving food safety by developing and validating methods for Mycotoxin determination followed by assessing Mycotoxin in Food and Feed in large scale. In addition, his PhD research aims at developing sensitive method followed by assessing the impact of climatic and processing conditions on Mycotoxin in different foodstuffs and feed. Furthermore, his research also focuses on conducting probabilistic human health risk and ranking the risk due to Mycotoxin exposure in human food chain. This research will contribute to mitigating mycotoxin contamination in food and feed, informing global public health, regulatory policies, and sustainable food production. Rayhan holds an MSc in Sustainable Food System Engineering, Technology, and Business from University College Dublin (UCD) and BSc and MSc degrees in Food Engineering and Tea Technology from Shahjalal University of Science and Technology (SUST), Bangladesh. His research interests encompass food safety, environmental contamination, analytical chemistry, and risk assessment.
