Ruth works closely with the School of Medicine at Ulster University in conducting first-in-human trials testing novel treatments for obesity.
In addition, Ruth works with a wide range of food companies to perform rigorous scientific testing of the potential health benefits associated with food products and dietary supplements, as well as in the discovery of new health benefits.
