Dr Seamus O’Mahony graduated from University College Cork (UCC) with a BSc and PhD in Food Science and Technology in 2001 and 2005, respectively. During his PhD, he conducted part of his research at the University of Wisconsin-Madison under Prof. John Lucey, supported by a National University of Ireland travel bursary. Following his PhD, he received an Embark Postdoctoral Fellowship from the Irish Research Council to continue his studies at the Teagasc Moorepark Food Research Centre under Dr Tim Guinee.
In 2006, Dr O’Mahony joined a multinational pharmaceutical/food company, specialising in infant nutrition. Over four years, he held various roles with increasing responsibility, gaining extensive experience managing global, multidisciplinary projects across Research & Development, Product Development, and Operations. Currently, his research at UCC focuses on food ingredients, structure and functionality; isolation and enrichment of food constituents; nutritional product formulation and processing; and protein-carbohydrate interactions in food systems. He has secured over €4m in research funding and has completed a Certificate and Diploma in Teaching and Learning in Higher Education.
Dr O’Mahony also develops and delivers training courses in dairy science, food ingredient development, and infant nutrition for professionals through UCC’s Food Industry Training Unit.
