Dr. Tom O’Callaghan is a Senior Lecturer in Sustainable Dairy Processing at the School of Food and Nutritional Sciences, University College Cork (UCC). He holds a BSc in Food Science (2014) and a PhD in Science (2018) from UCC. Dr. O’Callaghan conducted his doctoral research at Teagasc Moorepark Food Research Centre, focusing on the effects of cow feeding systems on the quality and composition of raw milk, dairy products, and the rumen. He received a Teagasc Overseas Training Award, enabling him to complete part of his studies at The Metabolomics Innovation Centre, University of Alberta.
In 2017, he was appointed Research Officer in Dairy Chemistry at Teagasc, Department of Food Chemistry and Technology, before joining UCC in 2020. At UCC, he established the Food Chemistry and Production Research Group, based in the Dairy Science Centre of Excellence. His research spans food chemistry, nutrition, processing technologies, analytics, and sustainability, with a focus on the quality, nutritional, and functional properties of milk and dairy products.
Dr. O’Callaghan is a Principal Investigator with the Dairy Processing Technology Centre and a Funded Investigator with VistaMilk, an SFI Research Centre. His work emphasizes sustainable dairy processing, grass-fed dairy systems, milk metabolomics, and predictive analytics for food authentication.
